I mentioned this bread to ZaftigMomma and she said she'd like the recipe, so I thought I'd pop it on here and then others can try it out too!
The original recipe called for fennel rather than carroway, but *shrugs* I like my version better. You can try either.
This is a recipe for a bread machine, for a medium sized loaf.
Ingredients:
210ml water
2 tbsp sunflower oil
2 tsp clear honey
200gm grated carrot
500gm bread flour (either type, I like wholemeal, but you can use white. If I'm using wholemeal, I don't put quite so much flour in - it makes the bread a little lighter)
2 tbsp skimmed milk powder
1 1/2 tsp carroway (or fennel) seeds
1 1/2 tsp salt
1 tsp easyblend dried yeast
Okay, put the ingredients in in the order that your breadmaker likes - wet or dry first. Mine likes the wet stuff first, so I put in the water, oil, and honey in, then sprinkle the grated carrot in (this is important, as the carrot can clump together otherwise). Next put in the flour, milk powder and carroway seeds, salt in one corner and yeast in the other. Cook it on the setting used for the flour you're using and off you go! This is a lovely fragrant, almost 'cake-y' bread, and if you spread it with a little low fat cream cheese is slightly reminiscent of carrot cake....

I haven't tried it yet as I'm lacking a couple of ingredients...namely the caraway seeds and carrot *lol* and there's no point in trying without those ; ) I must say that it sounds really yummy!
